Uh, dude. Because they made Shiek and Zelda? You could say 'therefore Link is female' all you want but that wouldn't make it true, because he's a (womanly) man-elf.
However when talking about Sheik saying "He" or "She" is acceptable as Sheik plays the role of a male character. Yes, Sheik=Zelda, however like in the plays of old when men played even the roles of women that wouldn't make the character a man, that would make the character female, however the person behind the costume or personality would be a man.
Therefore you could say Sheik is either. Sheik doesn't really exist as it is just an alt. personality of Zelda. A guise for Ganondorf not to reveal her/him to actually be the princess Zelda.
